A bold take on tradition, the California-style chicken sausage gumbo combines tender chicken thigh, andouille sausage, bell peppers, onions, and celery in a rich, dark roux, served over rice.
LOS ANGELES, March 17, 2025 – Everytable, the mission-driven company making scratch-cooked, nutritious food accessible to everyone, everywhere, and two-time James Beard-nominated Watts native Chef Keith Corbin, co-owner and executive chef of the critically acclaimed Alta Adams and best-selling author, have joined forces to provide a soul-satisfying gumbo. Inspired by the smoked chicken and sausage gumbo on the Alta Adams menu, Chef Corbin’s California Gumbo, the newest offering through Everytable, features tender, boneless, skinless chicken thigh, andouille sausage, and the classic trinity of bell peppers, onions and celery in a rich, dark roux, served over rice and finished with fresh parsley for a soulful Cali twist.
Chef Keith Corbin is known for his inspirational story and his modern, California-inspired take on soul food. His Los Angeles Times bestselling memoir, California Soul: An American Epic of Cooking and Survival, details his life journey, early struggles and success found in the culinary world. Beyond cooking, Chef Corbin is an advocate for second-chance employment, hiring formerly incarcerated individuals and mentoring those from underserved communities. Chef Corbin co-founded Alta Community, a nonprofit dedicated to empowering communities through food.

Chef Corbin’s California Gumbo is available online and for pick-up, delivery and dine-in options at all 38 Southern California Everytable shops on Monday, March 17. Pricing will vary by Everytable location, ranging between $8.95 and $10.25 as per the company’s unique variable pricing model based on the median household income of the neighborhood where each store is located.
The Inspiration:
Growing up in the Jordan Downs housing projects in Watts, Corbin was involved in gangs and drug dealing, which ultimately led to his incarceration. It was during his time in prison that he discovered his passion for cooking and began working in kitchens. After his release, Corbin joined the LocoL restaurant group, founded by celebrity chefs Roy Choi and Daniel Patterson which aimed to redefine fast food by making healthy and culturally relevant food accessible to people in food deserts, while also offering job opportunities and culinary training to local residents. This opportunity set the stage for Corbin’s next venture—partnering with Patterson to open Alta Adams, a "California Soul" food restaurant focused on using local produce and healthier ingredients to reimagine the dishes he grew up making with his grandmother. Alta Adams earned widespread acclaim, with Esquire, Thrillist, and the Los Angeles Times naming it among the best restaurants in the country, and The Hollywood Reporter calling it "Black Hollywood's top restaurant."

Everytable’s Meal Collaborations - Every meal has a story.
Chef Corbin’s California Gumbo is the fourth in a series of Everytable meal collaborations that embody the stories, flavors and inspirations of a dynamic group of influencers, leaders, personalities and culinary innovators. 2025 kicked off with a partnership with chef and wellness entrepreneur Charles Chen offering a delicious, healthy take on Taiwanese Braised Pork. At the end of 2024, Everytable and actor, author and lifestyle influencer Keith Manley launched Keith’s Spicy Shrimp and Noodles, a fusion of bold Asian flavors and Southern-style comfort. In November, Evertyable partnered with My Friend’s Place, a center dedicated to serving unhoused young people in Hollywood, to offer a savory Thanksgiving meal focused on friendship. Future collaborations include partnerships with musicians, community members and more. Details will be announced in the coming weeks.
