This homemade meal hits all the right notes. Blackened shrimp is paired with a medley of crisp red bell peppers, red cabbage, sweet carrots, crunchy celery, and fresh peas. Seasoned with aromatic garlic, zesty ginger, and savory tamari soy sauce, then tossed with perfectly cooked lo mein noodles. Finished with a ginger-garlic hoisin sauce and a dash of sesame seeds, this dish brings together bold and fresh ingredients in perfect harmony.

Keith Manley’s journey from North Carolina to Los Angeles embodies a spirit of constant exploration and personal growth. Since featuring on the reality TV show “Married at First Sight,” Keith has become known for being a Southern gentleman that is dedicated to building community and passionate about mentoring youth. His book, Life is Just… A Walk Within, reflects his commitment to new adventures and self-evolution. Despite the many changes on his path, one constant has been his deep love for food, particularly Asian cuisine. 

Upon his release, Corbin was determined to forge a new path. He began working in kitchens, where his raw talent and deep understanding of flavor quickly became evident. His breakthrough came when he joined the team at LocoL, a revolutionary fast-food concept spearheaded by chefs Roy Choi and Daniel Patterson, designed to bring affordable, high-quality food to low-income communities.

This opportunity set the stage for Corbin’s next venture—partnering with Patterson to open Alta Adams, a "California Soul" food restaurant focused on using local produce and healthier ingredients to reimagine the dishes he grew up making with his grandmother. Alta Adams earned widespread acclaim, withEsquire,Thrillist, and theLos Angeles Timesnaming it among the best restaurants in the country, andThe Hollywood Reportercalling it "Black Hollywood's top restaurant.

Inspired by The Great Migration of African Americans from the South to the West, Corbin infuses traditional family recipes with fresh ingredients local to California.

Beyond the food, Corbin is passionate about creating opportunities for those who have been overlooked by society. He actively hires and mentors formerly incarcerated individuals, understanding firsthand the difficulties of reintegration and the need for second chances.

Through his leadership, Alta Adams has become more than just a restaurant—it’s a space of empowerment, providing career pathways and a sense of belonging for those looking to turn their lives around.

Corbin’s approach to food is deeply personal. His dishes are vibrant, fresh, and balanced, paying homage to the flavors of his grandmother’s kitchen while reflecting his own evolution as a chef.

8-10 Shrimp
1 cup Noodles 
¾ cup Lo Mein Veg
2 Tbsp Lo Mein Sauce
2 tsp Green Onions

Ingredients

Gumbo:

Ingredients

Blackened Shrimp:
2 Tbsp Neutral cooking oil
1 ½ lb Large Shrimp (31-40 size), peeled, deveined, tails removed
2 Tbsp Smoked Paprika
2 Tbsp Paprika
1 Tbsp Onion Powder
1 Tbsp Garlic Powder
1 Tbsp Black Pepper
1 Tbsp Thyme, dried leaves
1 Tbsp Oregano, dried leaves
1 Tbsp Kosher Salt (or to taste)
2 ½ tsp Cayenne
2 tsp White Pepper


Lo Mein Style Veggies:
2 Tbsp Neutral cooking oil
½ cup Red Bell Pepper, thinly sliced
½ cup Carrot, thinly sliced or shredded
½ cup Green Cabbage, shredded
⅓ cup Celery, diced
¼ cup Green Peas, blanched or frozen
¼ cup Red Cabbage, shredded


Stir-fry Seasoning:
1 Tbsp Fresh Ginger, finely minced or pureed
2 tsp Tamari Soy Sauce, low sodium
1 tsp Sesame Seeds, toasted
1 tsp Garlic, finely minced (1 small clove)
½ tsp Black Pepper
½ tsp Kosher Salt


Lo Mein Sauce:
½ cup Hoisin Sauce
1 Tbsp+2 tsp Tamari Soy Sauce, low sodium
1 Tbsp Rice Vinegar, unseasoned
1 Tbsp Orange Juice
1 Tbsp Green Onion, chopped
2 tsp Sesame Oil
2 tsp Lime Juice
1 tsp Worcestershire
1 tsp Ginger, finely minced or pureed
1 tsp Black Garlic Puree
1 tsp Sesame Seeds, toasted
1 tsp Brown Sugar
½ tsp Gochugaru Korean Chili Flakes (or similar)
¼ tsp Chinese Five Spice
¼ tsp Black Pepper


Noodles:
2 packages Japanese Style Stir Fry Noodles (about 15oz ea)
Hot Water


For Plating:
2 Tbsp + 2 tsp Green Onions, chopped

Prep and cooking instructions: Prep all ingredients before getting started.

Prep and cooking instructions: Prep all ingredients before getting started.
Mince or puree the garlic and ginger.
Peel and slice or shred the carrot(s).
Slice the bell pepper and cabbages.
Dice the celery.
Have all ingredients and seasonings measured and ready to go.

Make the shrimp
Preheat oven to 375ºF
In a small mixing bowl, combine all spices and seasonings
Toss shrimp with ⅔ of the seasoning mixture.
Arrange shrimp in a single layer on a parchment-lined baking sheet.
Evenly sprinkle remaining seasoning over the shrimp.
Place in oven and cook for 12-15 minutes, or until a thermometer in the thickest shrimp reads 145ºF.
Remove from oven and set aside, keeping warm until time to plate.

Make the veggies
Add all prepared vegetables to a large mixing bowl.
Mix with a wooden spoon to ensure the vegetables are evenly combined. 
Set aside until ready to stir-fry.

Make the sauce 
Combine all ingredients in a medium-sized mixing bowl.
Whisk together until all sauce ingredients are thoroughly combined. 
Set aside until ready to plate.

Prepare the noodles
Rinse noodles under hot running water for 1-2 minutes.

Let’s cook!
Whisk together all seasonings for shrimp and set aside.
Toss shrimp in ⅓ of the seasoning mixture, reserving the remainder.
Heat 1-2 Tbsp of oil to a sauté pan and heat over medium-high heat.
Add shrimp to pan, and sauté for 2-3 minutes, tossing regularly..
Sprinkle remaining spice mixture over the shrimp and continue to cook for ~1 minute.
Add vegetable mixture, without seasoning mixture, and sauté for 2 minutes.
Add noodles and vegetable seasoning mixture and sauté for another 1-2 minutes.

Let's plate it: 
Place an even amount of noodles in the center of 4 separate shallow bowls.
Drizzle about 2 tbsp of sauce over each bowl of noodles
Place even amounts of veg mix on top of each mound of noodles.
Add equal portions of the shrimp to each bowl.
Garnish with green onions.
Serve and enjoy!
